Coconut and Jam Biscuits

Primary Ingredients

  • Wheat Flour (atta)- 3 bowls
  • Refined flour (maida)- ½ bowl
  • Gram Flour- ½ bowl
  • Vanaspati ghee- 1 bowl
  • Caster sugar- 1 bowl
  • Baking powder- 1 tsp
  • Baking soda- 1 tsp
  • Refined oil- 6 tsp
  • Milk- ½ bowl

Flavors and Toppings

  • Strawberry/ vanilla essence- 1 tsp
  • Mixed fruit jam- 2 tsp
  • Coconut powder- ½ bowl
  • Walnuts- for topping

Recipe

Take a large bowl. Put caster sugar, vanaspati ghee and strawberry / vanilla essence into the bowl. Beat them with the help of a spoon or beater like you beat coffee. Beat till both of them combine to form a creamy mixture. Keep it aside.

Take a separate bowl and add wheat flour, gram flour, baking powder, baking soda after filtering them with the help of channi. Mix them well and add the creamy mixture into the dry ingredients. Add mix fruit jam, refined oil and grated coconut at this stage. Make it into a dough. Add milk if the mixture does not combine. The mixture should not be too smooth. Flatten the dough with the help of ping like chapatti. Cut it into small portions or take a cookie cutter to make it better.

Take a baking trey. Cover it with refined oil and spread a thin layer of refined flour on it. Put 6-8 pieces of the dough on the trey. Pre heat your oven at 180-degree centigrade for 10 minutes. Put the trey inside the oven and bake the cookies for 8 minutes. Do not remove until the cookies turn brown in color. Remove the trey and let the cookies settle for some time.

Store the baked cookies in a cool and dry place.
